Aren’t s’mores just the quintessential summer dessert?
Sadly, I live in Manhattan and don’t have a fire pit handy. This week, I got invited to a friend’s apartment for a bbq, because she has a yard and a grill (miraculous enough in the city)…but still no campfire, so I made these cookies to make us all feel like we were in the middle of the woods somewhere with marshmallows on skewers.
S’mores Cookies (adapted from Everyday Food)
Makes 30 cookies
- 1/2 cup old fashioned oats
- 1 cup all-purpose flour
- 1 cup whole wheat flour
- 1/2 tsp ground cinnamon
- 1/2 tsp baking soda
- 1/2 tsp salt
- 2 sticks unsalted butter, at room temp
- 3/4 cup light brown sugar
- 1 large egg
- 1/2 cup semi-sweet chocolate chunks
- 15 large marshmallows, halved horizontally
Preheat your oven to 350 degrees. Meanwhile, pulse the oats in a food processor until they are finely ground. Combine the oats, flour, baking powder, salt and cinnamon.
In a separate bowl, cream together the butter and sugar with an electric mixer for ~4 minutes, until light and fluffy. Beat in the egg. Mix in the flour on a low speed until the dough just comes together.
Spoon the dough in 1 tablespoon measurements onto a baking sheet, one inch apart. Place 2-3 chocolate chunks on top of each cookie.

Bake for about 12 minutes, until the edges just start to turn golden brown.
Now comes the fun part, get excited -
Heat your broiler to high. Place a marshmallow half on top of each cookie and place the baking sheet about 3-4 inches under the broiler. They”ll become golden in about 2 minutes, so don’t walk away. Even though I like to completely set my marshmallows on fire when I’m really making s’mores over an open flame, you don’t want to set your cookies on fire.

These were a big hit at the bbq. The cookie has a nice graham-crackery texture and flavor – definitely from the oats, whole wheat flour and cinnamon. And a fun little fact: they only have around 160 calories per cookie.
I’m slightly crazy for having even used my oven at all this week when it’s been 100+ degrees outside, but it was worth it. I have some cookie leftovers to sustain me through my very long journey to Cape Cod tonight…I’ll be disconnected for the weekend but promise to return with lots of pictures and stories!
