Finally!

Finally, Friday has come!!!  I have been waiting for this day all week – in a few hours (fingers crossed), I will be on my way to the beach for a weekend full of bbqs, friends and fun!  I will definitely be following some of my own tips while I’m there…but also indulging in the festivities.  :-)

Growing up, I always made a flag cake for 4th of July soo following tradition, I whipped up a yellow cake last night (totally used the box mix) and will add the Cool Whip and berries right before serving.  I’ll try to take a pic when it’s all put together!

Anyway, back to last night…is anyone else in New York completely afraid of making fish in their apartment?  I am, hence why I never have.  But I really love fish and actually get made fun of because whenever I dine out and there is fish on the menu, I pretty much always order it.

Fish tacos specifically are one of those elusive dishes that you only order when you’re on vacation, or at your favorite Mexican restaurant…but never dare to try to make them at home. I’ve always been intimidated by them…but why?? Well for a few reasons: a) my apartment will smell like fish, b) I don’t know how to season/marinate or cook the fish.

Fear not!

Mahi – Mahi Tacos with Spicy Slaw (serves 1)

  • 1 4oz filet mahi-mahi (or other white fish such as tilapia, halibut or snapper)
  • 1 lime
  • Chili powder
  • 1/2 cup shredded cabbage (green or red or both)
  • 1/2 avocado, sliced
  • 2 tbsp non-fat plain greek yogurt
  • Hot sauce (Cholula brand preferred)
  • 2 corn tortillas

Marinate your fish in the juice of half of a lime and a sprinkle of chili powder on each side for 15-20 minutes.  Heat up your grill and cook the fish for about 3 minutes one each side, or until cooked through.

Meanwhile, add the juice of the other half of the lime to the cabbage, as well as a dash of hot sauce and set aside.  Mix the yogurt with 2 tsp lime juice, 1 tsp chili powder and salt & pepper.

Follow instructions for warming your tortillas (via microwave or in a skillet) and begin assembling!

Flake the fish and split between the two tortillas…top with cabbage, avocado and yogurt sauce.

So happy these were so easy to make and my apartment still smells like roses (well maybe not roses, but you know what I mean).  I’m getting antsy over here about my departure so I’m going to say bye for now.  I hope everyone has an amazing weekend celebrating the 4th!!  :-D

    I love easy taco recipes. Tacos are so delicious when you use great ingredients as you did! I always use that finishing avocado-touch as well. Living in a NYC apartment as well, we always take that chance of making our apartments smell like fish when we cook it. As long as it tastes good, the smell will always go away. It just tastes so good, it’s difficult to resist. I light candles, and put on the fan vent, those two things always help when cooking fish. :)
